Homemade Trimoline Trimoline, also known as invert sugar syrup, is a mixture of glucose and fructose. It’s made by hydrolyzing sucrose, commonly found in table sugar, into its individual glucose and fructose components. This inversion of sugar is typically achieved by adding acid or enzymes to the sugar solution. For this recipe I use cream of tartar because the acid, which acts as an acidic catalyst for the inversion process, aides in breaking down the sucrose into its simpler sugar components.
