Aug 21, 2013 · NO! Campden (k-meta, potassium metabisulfite) doesn't stop or slow fermentation in any way! It's used all the time by cider and winemakers as an antioxidant, because brewer's yeast and wine yeast are amazingly tolerant of sulfites. It will NOT stop an active fermentation, unless used in such a large dose that the cider will be rendered undrinkable.

After about 2 more weeks in the bottle I gave one a try...it was super carbonated but not the most delicious thing ever. Heavy ferment smell, pretty tart.

May 27, 2011 · I am partial to cold crashing and kegging. If you are bottling, I believe that bottle pasteurization is probably more reliable for making a good sparkling cider on the first try. Both are described in the stickies As far as which ale yeast to use, Brupaks, S04, US05 and Notty are my favorites. Any of these will make a good pub cider.

Dissolve a small amount of dry brewers yeast in warm water - about 1/4 tps for 2 liters of cider. Fill a two liter soda bottle with the apple cider and add yeast slurry. Condition at room temperature for about 5 days.
